Soy Curls Dakgalbi (spicy🔥)

"Dakgalbi" literally means "chicken ribs (BBQ)" in Korean but I love using soy curls for the protein! Feel free to sub with actual chicken or any other protein source :)

Soy Curls Dakgalbi (spicy)

Servings: 2

Ingredients

  • 1.5 cups soy curls (you can sub with chicken or toasted tofu strips)
  • 2 tbsp cooking oil
  • ½ medium sweet potato (korean/japanese kind if available) , sliced thinly
  • 2 cups cabbage, sliced
  • ½ cup carrot, shredded
  • ½ yellow onion, sliced
  • spring onions, sliced for garnish (optional)
  • sesame seed for garnish (optional)
  • lettuce for wraps (optional)

Sauce (1/2 cup of this sauce)

  • 1.5 tbsp Gochujang
  • 1.5 tbsp Gochugaru
  • 1.5 tbsp Sugar or other sweetener
  • 1.5 tbsp Soy sauce
  • 1.5 tbsp Garlic minced
  • 1.5 tbsp Cooking wine or mirim
  • ½ tsp sesame seed oil

Instructions

  • Soak soy curls in water for about 15-20 minutes
  • Make the sauce by combining all the sauce ingredients
  • Add oil to pan and add all the other ingredients including the sauce. Add more or less of the sauce depending on your spicy tolerance. Be generous with the veggies as they will create moisture for the sauce.
  • Turn on the heat to medium heat. Mix everything until the sauce is well incorporated.
  • Keep stirring until veggies are softened and cooked through. A good rule of thumb is to check on the sweet potatoes!
  • Garnish with spring onions and sesame seeds. Enjoy over a bowl of rice! Makes great wraps with lettuce as well.
